
Combine the pancake mix, 1/2 cup water and egg in a medium-sized mixing bowl; mix until a consistent batter is formed.
Dip the cookies into the batter.
Heat the oil in a frying pan and once hot, carefully place the cookies and cook until golden-brown, turning them over until both sides are light-golden.
Place on a paper towel to remove excess oil. Serve and enjoy!
